If you want a good iced coffee in the summer and get tired of tasting watery or overly bitter, then there is only one solution: cold brew coffee. This method guarantees a smooth and icy cup, every time. Making cold brew coffee has no great secret, nor does it require the high-level skills of a trained barista. You do not even need much special equipment beyond a large container for making the coffee and a strainer.
First of all, you should get a high quality coffee bean. Ethiopia origins may be one of your first choices. We grind the beans thickly with hand mills.
We need a 1 liter jar and grind 68 grams very coarse coffee.
We put 800 ml of water in our jar and pour over the ground coffee. Then add 200 ml of water. Meanwhile, the coffee is becoming thoroughly wet and mixed while we are pouring the water.
Close the lid of the jar, wait at least 12 hours, maximum 18 hours. You will learn how many hours you have to wait, depending on your taste, try by experiment, I am waiting for 12 hours.
Finally, you open the lid of the jar, you have to strain it through a filter. i use my Hario v60 for this . Other filters are okey too. My advice is to strain it 2 times. you will have a cleaner coffee. Your cold brew coffee preserves its freshness in the refrigerator for 2 weeks.
